Going under the broiler today to roast: several dozen jalapeños, almost 50 serranos, a handful of pequins, and a couple of guero and fish chilies. After they cool they are headed to the freezer for use throughout the year. I used to pickle extra jalapeños in jars but I prefer the ease and flavor of roasting and freezing the whole chili.
Not shown: several dozen Hatch chilies that just arrived in the local store waiting for their turn in the pan.
First eggplant harvest from two plants. I pushed my luck by leaving some of them on the plant so long after being out of town. Lucky for me it rained at home the whole time I was gone.
Listada de Gandia on left (larger one is about baseball size), Pandora on right (about Coke can length but a little narrower). Just chopped some of them into little bits with skin left on, now roasting them to go in a pasta sauce with yellow bell pepper and homegrown tomatoes, oregano, and basil.
